But tequila is not just for drinking! Try some poured over a pancake or incorporate into the batter to add flavour and complexity.
For the batter:
200ml Jose Cuervo Especial Silver 
135g Plain flour
10g Baking powder
100ml Milk
1 whole Egg
Butter for greasing the pan
For the topping:
15g Melted butter
10g Freeze-dried strawberries
Mix flour and baking powder together.
Separately, mix all the wet ingredients together.
Combine the wet and dry ingredients and ensure there are no clumps of flour remaining.
Add a little butter to a pan at medium-hot heat. Pour a portion of batter onto the pan and cook for a minute or so before checking the underside for doneness. Flip, and cook the top. Garnish and enjoy right away.
