A Treat on Nature’s Path.
It’s winter and we crave warming desserts. Nature’s Path offers delicious and healthy products for breakfast and beyond. Here we have a recipe for Maple Sunrise Crumble. It’s one of those flexible dishes which can easily be adapted to suit what you have in your pantry. It is gluten-free and vegan, so suitable for all the family!
Nature’s Path products were the first USDA certified organic cereals on the market and since then the founders have worked tirelessly to keep organic advocacy at the forefront of their mission. They invest in farmland, converting it to organic. Maple Sunrise cereal is a crunchy mix of healthy flakes, puffs and crispies with real maple syrup, and has no artificial flavours or colours.
Maple Sunrise Crumble
Serves 4-6
Prep time: 20 mins
Cook time: 30 mins
Ingredients
6 granny smith apples – peeled, cored and sliced
1 punnet berries – 150g
3 tbsp maple syrup
2 tbsp vegan butter
1 tsp cinnamon
1/2 tsp ginger
1 tbsp cornflour mixed with 4 tbsp cold water
For the crumble:
150g Maple Sunrise cereal, lightly crushed
50g pecans, coarsely chopped
50g ground almonds
50g vegan butter melted
Method
1. Preheat your oven to 180°C (fan).
2. In a large saucepan, combine the prepared apples, berries, vegan butter, maple syrup and spices.
3. Cook over a medium heat until the apples are just softened and everything is coated evenly.
4. Stir in the cornflour slurry; you should end up with a thick, glossy filling.
5. Remove from the heat and transfer to a baking dish. Set to one side while you prepare the crumble.
6. In a large mixing bowl, combine the crushed cereal, chopped pecans and ground almonds.
7. Pour over the melted vegan butter and bring together with a spoon to form clusters.
8. Distribute the crumble mixture on top of the fruit filling then place in the oven to bake for 30-35 minutes until golden brown.
9. Allow to cool slightly before serving as it is or with an indulgent topping of your choice.
Notes
● Most apples will work, just adjust initial cooking time according to how soft they are.
● I used blackberries but other berries will work just fine.
● Coconut oil can be substituted for the vegan butter if preferred.
● Other nuts can be substituted for the pecans if preferred.
● Gluten-free flour can be substituted for the ground almonds.
